Sesame grilled vegetable sandwich

I
Ingredients
  • Fine chopped bell pepper or capsicum: ¼ cup,
  • Boiled mashed potato: ¼ cup,
  • Fine chopped green chillies: 2,
  • Coriander leaves: 2 tbsp,
  • Fine chopped onions: ¼ cup,
  • Grated mozzarella cheese: ¼ cup,
  • Black pepper powder,
  • Sesame seeds: 1 tbsp,
  • Butter, Salt,
  • Lemon juice: 1 tsp,
  • Bread slices: 4

Instructions
  1. In a bowl, mix together bell peppers, onions, mashed potatoes, cheese, little salt, black pepper powder, green chilly, coriander leaves and lemon juice.
  2. Take a bread slice and put generous amount of stuffing on it.
  3. Cover it with other piece and apply butter on top. Sprinkle some sesame seeds and use same butter knife and rub over the seeds so that they get stick to the bread.
  4. Heat pan at medium heat and put butter side down. Put some weight on the sandwich as shown in the video to make it crispy.
  5. Let it cook for few minutes then put butter and sesame seeds on this side too and flip the sandwich.
  6. Once sandwich is nice brown and crispy from both the sides take it out.
  7. Sandwich is ready to serve.
  8. Cut it in two pieces and serve this sandwich with chutney or ketchup

Upma

Rava coarse and dry roasted only
Oil 
Mustard seeds
Asafoetida
Curry leaves
Spatter Chana urad daal
Red chilies 
Peanuts roast
Onion chopped
Stir
Veggies chopped
Salt 
Grated or julienne ginger and slit green chillies
Add water twice of rava
Bring it to boil . Turn the gas to low flame. 
Add rava slowly and keep stirring in one direction.
Cover the lid and just slow down the gas.
Let the rava get cooked for less than 5 min
Now open and add ghee and squeeze a lemon on the top and mix It well to check for any lump. 
Garnish with cilantro and serve hot with peanut chutney.


Peanut chutney

Oil
Mustard seeds 
Asafoetida
Peanuts roast properly
Chana daal(half of peanuts) roast
Urad daal
Red chillies
Green chillies if you want
Ginger
In the end 
Add Tamarind juice or paste
Salt

Grind it all in a smooth paste.

Brown rice dosa batter

Brown Rice Dosa

   Ingredients needed

   Brown Rice -2 cups
   Idly Par boiled rice -1 cup
   Whole Urad dal -1 cup
   Fenugreek seeds -1 tsp
   Poha -1 fist 
   Salt as needed

Grind the rice and daal separately and then grind them together for a consistent batter. Place the batter under the oven light for 8-10 hrs and helps in fermentation.

Bharwa tinda

आवश्यक सामग्री - Ingredients for Bharwa Tinda

  • छोटे छोटे टिन्डे -  500 ग्राम या 10-12 टिन्डे मीडियम आकार के
  • तेल -  2- 3 टेबल स्पून
  • हींग -   1 पिन्च
  • हल्दी -  1/2 छोटी चम्मच
  • लाल मिर्च पाउडर -  1/4  छोटी चम्मच
  • अमचूर पाउडर -  1/2 छोटी चम्मच
  • गरम मसाला -   1/4 छोटी चम्मच
  • धनियाँ पाउडर -  2 छोटी चम्मच
  • सोंफ पाउडर -  2 छोटी चम्मच
  • जीरा पाउडर - 1 छोटी चम्मच
  • हरी मिर्च -  2 ( बारीक कतरी हुई )
  • नमक -  स्वादानुसार या 3/4 छोटी चम्मच
  • हरा धनियाँ -   2 टेबल स्पून ( बारीक कटा हुआ )

Amritsari chole

Chole masala homemade
Dry roasted and blended
Add anardana too

Soak overnight and take 2 whistles in chole . Use very less water and salt and soda added to it

Make tea leaves water preferably black tea and add it to chole and leave it for 2-3 hrs.
Now in a pan add shahi jeera and fry onions less in amount and then add blended tomato more in quantity and then add your homemade masala and some soaked tamarind and mix it properly. Add your chole leaving the water behind and let all the chole drape in it and now add the left water to it and take one more whistle. Add kasoori  methi

Roasted red potatoes


Directions

  1. Adjust oven rack to lowest position and heat oven to 450 degrees. Toss potatoes with oil, salt and pepper. Arrange, cut side down, on a large lipped cookie sheet or jellyroll pan.
  2. Roast until tender and golden brown, about 30 minutes (check after 20 minutes). Transfer to a serving dish.

For katori

Roll it flat using rolling pin
Use a bowl and cut the extra ends using knife
Now grease a muffin maker and place these breads so to shape them like a bowl 
Brush oil in the bread
Heat oven 350 and bake for 15-20 min 
Bowls ready to fill it with any chat u want

Fruit cake

IFor fruit cake 

Recipe- Preheat oven to 400F, 
Mix 1 cup all-purpose flour,
 pinch salt, 
2/3 cup sugar, 
1/2 tsp baking soda, 
1/2 tsp baking powder, 
 add 1 egg, 
1/4th cup butter, 
1/2 cup curd, 
1/2 tsp vanilla essence, 
mix all together in mixer on medium speed for 10 min until it gets mixed well, add 1/2 cup tutti fruit and mix well, then pour it in greased pan, add some tutti fruity on top, place in oven and bake it for 25-30 min at 400F. After 30 min removes it, let it cool down then cut into slices.

Banana loaf bread

2 cup maida or 1 cup whole grain and 1 cup maida
Add 1tsp baking soda
1 tsp baking powder

Sieve the mixture
In a separate pan mash 2-3ripe bananas
1 egg
Add vanilla essence 1 tbsp
11/4 cup of sugar
2 tbsp buttermilk or curd
Add 1/2 cup unsalted butter or vegetable oil
Mix real well
Now add flour mixture to it piecemeal.
Add crush walnuts and raisins 
Ad pour the mixture to a greased dusted pan 
Temperature :  325f all over time

Sesame jaggery nuts brick



Ingredients 

Til dry roasted till light brown(more )
Dry nuts light ghee roasted  (less)
Scrapped jaggery
1 spoon ghee
And condensed milk to provide the texture  and softness ( If possible )

Add ghee to the pan
Once melted add jaggery to it and 1 spoon water. Add little bit condensed milk to make a paste of it and to avoid any lumps
Now add your roasted til and then mix and add roasted nuts as per the thickness you looking for. It will definitely get solidify as its processed in jaggery.

Take off the flame 
Make either balls by greasing your palms or else fix it on a foiled greased pre-prepared plate.

Halwai ka kaddu

  1. Cut pumpkin in thick slices.Take the thick peel out. Cut kaddu or pumpkin in small pieces, wash them with water and keep aside.
  2. Make chilly ginger paste or you can grate them and keep it aside.
  3. Heat the pan at medium heat and pour some oil. If you feel oil is too much you can lessen the amount but if you want to really make halwaii style than I suggest use same quantity of oil.
  4. When oil is hot add cumin seeds, methi seeds and stir them. Add chilly ginger paste and give it a nice stir.
  5. Now add turmeric or haldi powder, chopped kaddu or pumpkin and salt. Mix everything nicely.
  6. Add water and cover with the lid. Let it cook till kaddu/ pumpkin becomes fork tender. Here I want to make sure kaddu is not overcooked otherwise it will become mushy and halwai style is non mushy kaddu.
  7. Once kaddu/ pumpkin is cooked add coriander powder, chilly powder, dry mango powder, jaggery or sugar, kala namak (black salt). Mix everything gently.
  8. Kaddu ki sabzi or pumpkin sabzi is ready to serve.
